So last month we took you back to school to teach you all about tea and we're pleased to see so many of you continuing that journey at our tea academy. Remember, we release a new topic every Thursday so Tea Academy to catch up on any you've missed.

I'm off to Italy next week on holiday with my husband and little 18-month old boy. Running a growing business is hard work so I'm looking forwards to a long overdue break. Imminent holidays, the recent sunny weather and the exciting tennis has got BRUU in the mood for summer so this month we're encouraging you to make ice teas.

As you'll know, all our teas are packed full of natural ingredients which is the basis for the perfect iced tea. Thanks to our latest partner we've also included some gourmet ingredients which you can experiment with to make your own refreshing blends.

This month we've included teas which work well cold like our Blood Orange; a Sencha green from Japan that has a wonderfully exotic kick - we recommend serving this one with a hint of fresh mint. Next up, our Rhubarby Lapacho is a tea made from the inner bark of the Pau d'arco tree native to South America. It's long been used for its medicinal properties and is good for all sorts of things especially your immune system. So we thought it would be the perfect summer tonic and is a rich tea that works wonderfully with (freshly crushed) sweet fruits like melon or strawberry. Finally, you're going to enjoy our Summer Punch which is a Sri Lankan black tea mixed with apple and vanilla. You have to try this with cranberry juice and a slice of lemon for a tea-take on the classic Cosmopolitan cocktail.

So how do you make ice tea? All you need to do is brew each tea according to the instructions, then remove the leaves and put the liquid in the fridge to cool. Once cool pour into a nice cup or jug, add ice cubes, drop in some dried or fresh fruit, garnish with mint and serve with a straw and cocktail umbrella. You can also add a drop of syrup, cordial (a nice one), honey or sugar if you have a sweet tooth.

You're going to love ice tea and it will bring a whole new dimension to your BRUU. Most of our teas make fantastic cold drinks so if you have any previous BRUU's lying around get experimenting.
